Whats the normal ratio of geese to gander for breeding?
When should the gander be introduced to the geese?

Mating
The number of geese to one gander varies; generally the more geese per gander the better, provided fertility and hatchability are not affected.

With the heavier breeds, use one gander to three geese.
With the Chinese breed, use one gander to about five geese.

From experience geese are not as difficult as ducks to get ratio right. They will rarely overmate a particular female but it may happen, just unlikely. Large breeds like toulouse you can keep in pairs or trios but best to have no more than 3 or 4 because the ganders can be a bit lethargic.
Chinese you'll need at least a trio and they can have up to 5 or so females
